Fruit Salad- Fantastic Food Friday

I wanted something different the other day for the fruit I had with my lunch.

So, I’m pretty sure ya’ll know how to make a fruit salad- cut up your fruit, mix it up and wahlah! A fruit salad.

Not hard.

But kind boring.

Now, I love poppy seed dressing. But it’s good only on Asian chicken salad and berry-pecan salad. I think it’s a sweeter dressing, that’s why.
Anyway, I found a post on Pinterest (but didn’t pin it??!!) that had store bought lemon poppy seed on fruit. It looked tasty. Really really good actually. But I don’t usually keep it on hand because I can never finish it off because it goes bad. So I usually just try to buy the single serve ones. But then I was like… hey! I bet I can make my own! So back to Pinterest I went.

There are a lot of dressing recipes out there! So I combined a few, and left out the minced onion because, well, it was going on fruit! This makes enough for a small fruit salad for two people. Unless you’re pregnant, then you can eat the whole thing. (oops…)

Lemon Poppy Seed Fruit Salad

Anyway, you need:
1 tbsp mayo (I know, not clean, but it’s part of the 20% I refuse to give up!)
2 tbsp honey
½ tsp poppy seeds
1 tsp lemon juice (Some recipes used apple cider vinegar, but I didn’t try it)

Whisk it all together. And pour over your salad. Chill for at least 30 minutes. The fruit salad in the picture used a banana, a small apple, and a mandarin orange. It could have used a little more fruit because there was a lot of dressing in the bottom of the bowl.

Seven Citrus Salad

Adapted from The Eat-Clean Diet vegetarian Cookbook

Peel, pith, core, chop etc…
1 orange (I like the cara cara kind), 1 grapefruit, 2  tangelos (or mandarin oranges), 4 kumqats, and 1 blood orange.

Juice
1 lemon and 1 lime (roll between hands before cutting juicing to get more juice!)

Chop
2 tbsp fresh mint

Combine everything in a medium size bowl and chill for at least 1 hour, tossing occasionally.
