Thai Grilled Chicken with Sweet & Spicy Dipping Sauce.

I’ve made this several times in several ways. Hands down, the best is using dark meat. The breast meat just doesn’t have the same punch. I like the drumsticks best, David prefers the boneless, skinless thighs. We’ve done both grilling or broiling, and both are great! The marinade calls for some things that aren’t usually in my pantry- coconut milk and fish sauce, but they are worth the trip to the store!

Don’t skip the sweet and spicy dipping sauce. YUMMM! And it makes up super quick!

I like serving this with brown rice, green peas and grilled pineapple.
