Blueberry Oatmeal Muffin Cakes

There’s a reason why I don’t share many baking recipes. I hate baking. I would so much rather make a 3 course gourmet meal than bake a cake. I favor no bake desserts. When people ask what they can bring, I tell them dessert. I send my girls to nana’s house to bake Christmas cookies.

So when I DO bake something it’s a big event. Or birthday.

In this case, it was the day before my daughter’s birthday. (She turned 5 last week! Eep!) She LOVES muffins and she LOVES oatmeal and she LOVES blueberries. I found a recipe for blueberry oatmeal muffins. So I made them for her as a birthday treat. She said they were the BEST CUPCAKES EVER!

I didn’t have the heart to tell her they were muffins, so here what you need to know about Blueberry Oatmeal Muffin Cakes:

2 1/2 cups old-fashioned rolled oats
1 1/2 cups low-fat milk
1 large egg, lightly beaten
1/3 cup pure maple syrup
2 tablespoons canola oil
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup blueberries, fresh or frozen

Now, I’ll tell you, you have to soak the oats in the milk over night, but the rest mixes up pretty quick, bakes in about 25 minutes and BAM! You have little mini baked oatmeal servings. They are pretty small, so we each had 2 or 3 with some Greek yogurt. I think during the school year, I would bake them on Sunday and have them on hand for throughout the week. You will want to warm them up though. Cold oatmeal = ew!

    Hi, I think your blog might be having browser compatibility issues.
    When I look at your website in Firefox, it looks fine but when opening in Internet Explorer,
    it has some overlapping. I just wanted to give you a quick heads up!
